I don’t often fancy recipes in newspapers but this recipe for a Sliced Apple Cake from the Times – with some minor adjustments – is now my favorite. It’s just as good, or even better, next day – if you have any left.
I always used to grease my cake tins with vegetable oil but then discovered Bake Easy! spray at Lakeland. It works really well but unfortunately they only do the liquid now so this time I had to buy the spray online.
The other indispensable gadget for me is their Cake Tester. The black end turns bright red when the cake – or muffin – is done.
Most of our favourite cookshops in London have vanished. John Lewis and Peter Jones still have respectable cooking departments, while those in most of the other big stores have shrunk.
In contrast, not only were there large cookshops in the big stores within walking distance of our hotel in the centre of Gothenburg , but there were at least five independent cookshops full of ‘don’t need but must haves’!!
And even with the unfavourable rate of exchange the prices were quite reasonable . Perhaps in Sweden they don’t only sit glued to cookery programs on the TV but they actually cook!! Judging by the amount of space given to cake baking and decorating, the Swedes are into cakes and pastries in a big way.
Yes, yes – it’s another cookbook. I saw it on our last visit to the Lakeland store and found it irresistible.
I bought a spiralizer a while ago when my vegetarian grand-daughter said it was all the rage, but other than spiralizing s courgette to add to a green salad and a carrot to add to my chicken soup, my spiralizer had languished in the cupboard.
However, looking through the Spiralizer Cookbook on display in Lakeland, there were so many appetising-looking recipes. Lots of them are low calorie and will help in my fight against putting on weight. It’s hard if you enjoy cooking.
So far I’ve only made the Celeriac Remoulade but I must try Catherine Atkinson’s spiralized potato cake and potato latkes. I shall certainly be looking at some of her other cookbooks.

When I finished my second house job I was five months pregnant. I was unlikely to find a part-time temporary job in medicine and I couldn’t face the thought of standing all day in a dental practice, though it would have been much easier to find a locum dental appointment. I decided to take a cookery course instead. At that time, I could cook omelettes and minestrone, but not much else. Only the girls in the lower streams at school did cookery and my mother had always shooed me away.
‘Food is rationed,’ she’d say. ‘Don’t want you wasting good food. Time enough to learn to cook when you get married.’
Our son, Simon, says that we have too many kitchen gadgets but I don’t think that’s possible. For me it’s like not being able to be Too Rich or Too Thin!!
When I was cooking today, I realised just how many of the kitchen tools I use everyday came from Lakeland – including some they no longer stock like the little pyramidal plastic pots I use to freeze aliquots of lemon or lime juice or herbs. We were delighted when Lakeland opened a branch in Centre Court Mall in Wimbledon. Whatever we go there to buy we end up buying more.
Joshua didn’t really approve of the fact that though these bowls and plates look like Spanish pottery they’re made of Melamine – but who cares? We’ve had our recent share of breakages and I found the small bowls on the left irresistible!!
Louise and her family have yogurt on their breakfast muesli. Using this electric yogurt maker from Lakeland, I mix a small pot of plain Greek-style yogurt and a litre of UHT full cream milk. No boiling and nothing to sterilize. Just incubate overnight. Easy-peasy!!
We used to have to drive to Lakeland’s branch in Guildford, Surrey, but now they have branches much nearer to us in Brent Cross and Wimbledon. Doesn’t matter what we go there to buy, there are always things we don’t need but must have. Looking round our kitchen we have been tempted by lots of those!!
