Scrumptious Apple Cake

I don’t often fancy recipes in newspapers but this recipe for a Sliced Apple Cake from the Times – with some minor adjustments – is now my favorite. It’s just as good, or even better, next day – if you have any left.

Indispensable for cakes


I always used to grease my cake tins with vegetable oil but then discovered Bake Easy! spray at Lakeland. It works really well but unfortunately they only do the liquid now so this time I had to buy the spray online.

The other indispensable gadget for me is their Cake Tester. The black end turns bright red when the cake – or muffin – is done.


Bake 180°C 40 minutes
Grease and line the bottom of a 20cm springform cake tin 

150gm marg/ butter
145gm caster sugar
1 teaspoon lemon zest

150gm self-raising flour
1 teaspoon baking powder
3 lightly beaten eggs

50gm sultanas
1½ Granny Smith apples – peeled, cored and cut into 5mm slices 

½ tablespoon caster sugar mixed with ¼ teaspoon mixed spice for dusting 

Cream the marg/ butter, sugar and lemon zest
Beat in the eggs gradually with tablespoons of flour
Stir in the sultanas
Pour into the prepared tin and level
Arrange the apples in concentric circles starting from the edge of the tin
Sprinkle with sugar/ mixed spice mix

Bake 180°C 40 minutes
